Power Spheres AKA Nighttime Nursing Nibbles - Spring

These delicious balls are fantastic for all kinds of occasions.  They make great after school snacks for kids, they are full ofprotein for athletes after a workout, they also happen to make ideal fuel for nursing moms during those late night feeds!  I have relied on these often for a pick me up!

3/4 cup unsulphured dried apricots

3/4 cup unsulfphured dried apple

4 brown rice cakes (unsalted)

1 cup unsweetened coconut

1/2 cup raw sunflower seeds

1/2 cup raw pumpkin seeds

1/3 cup raw sesame seeds

1/2 cup rolled oats

11/4 cup unsweetened apple sauce

1/2 cup nut butter of choice, slightly warmed

In a food processor, pulse the apricots, apples and rice cakes to a fine texture.  Transfer to a large bowl and set aside.

Now pulse the coconut, seeds, and oats to roughly combine.  Add to the fruit mixture, along with the apple sauce and nut butter.  Mix everything together until well combined.  Cover and chill the dough for at least 1 hour.

Roll the dough into balls, approximately 2 oz (yields 15 spheres).  Roll the balls in toasted sesame sees to coat, pressing them in slightly.  Serve, or wrap and refrigerate.
